Iran grows 85 to 90 percent of the world's saffron but sells it for $862 a kilo: anatomy of the red gold paradox (Sunday, 26 July 2026)
The FAO stated officially on 26 November 2025 that Iran produces 85 to 90 percent of the world's saffron. Yet Iranian customs data for 1403 (2024/25) puts the average export price at roughly $862 per kilo, less than half the world average of about $2,000. Sahmino examines Iran's three different shares of this market, the re-export role of the UAE and Spain, and the counterintuitive finding that "red gold" has lagged both gold and the dollar over the long run.

Iran grows ninety percent of the world's saffron today. So who actually takes the money? The FAO says Iran produces eighty five to ninety percent of the world's saffron. But the average export price per kilo in twenty twenty four was eight hundred sixty two dollars. Fourteen years ago that same kilo fetched three to four thousand dollars. The land is tired too. Look at the path down: from several thousand dollars to under nine hundred dollars today. The Emirates, Spain and China take sixty five percent of our export value. Over seventy seven percent of exports leave in large packs with no Iranian brand. Spain grows only twenty five tonnes, yet sells about fifty eight million dollars of saffron. After official costs, the exporter keeps just one hundred forty to one hundred ninety dollars a kilo. Do not confuse three numbers: production, recorded value, and direct export volume. Gold rose eight to nine times in five years, while saffron rose only four to five times. The saffron futures market is thin. On one winter day just one hundred thirteen contracts traded. The FAO ran a project with a two hundred thirty three thousand dollar budget. Against the problem, it is small. Now watch these five signals to see whether anything is really about to change. Quality is not the issue. Qaenat saffron still has the highest colouring strength in the world. So the answer: our saffron money is made on a Spanish shelf, not a Khorasan field.
